Approved Certification Evaluator
Approved Certification Evaluators (ACE) are an integral part of any ACF Practical Exam. Levels of ACE status: Approved Certification Evaluators proctor practical exams, Lead Evaluators coach and supervise apprentices and Regional ACE Trainers facilitate trainings and refreshers. As an ACE you can extend your professional experience to fellow chefs while earning continuing education hours.
ACE Refresher “Back To Basics” Webinar
Approved Certification Evaluators must attend an ACE Refresher annually (each calendar year). If a refresher is not completed by the end of the year, your ACE status will be considered inactive until a refresher course is completed or you attend an 8-hour training. The following dates and times have been scheduled; please complete the survey to indicate your participation.

Process and Requirements
Step 1: Complete the ACE application and return it to the ACF national office, 180 Center Place Way, St. Augustine, FL 32095.
- be an ACF certified CEC, CEPC, CCA, CCE, CMC, or CMPC.
- be an ACF member in good standing.
- have taken a practical exam (exemptions: 5 or more years as a culinary instructor, winning a silver medal or higher in the categories F-1, F-4, F-5, or G at an ACF/WACS competition, or ACF Approved competition judge).
ACF Approved Certification Evaluator Application
An ACE apprenticeship is defined as the “shadowing” of the evaluation process from start through critique. The ACE candidate is to observe the evaluation process and utilize skills taught in the ACE Training Seminar. More
Maintain ACE Status
Approved Certification Evaluators must maintain their ACF membership, certification status, evaluate at least one practical each calendar year and attend annually ACE Refresher. ACE Refresher sessions are presented via a Web-based seminar. Failure to meet these requirements will invalidate an evaluator’s status until requirements are fulfilled. Attending an 8-hour ACE Training Seminar will satisfy the requirements for annual practical exam and refresher course.
