2019 Certified Master Chef® (CMC®) Exam

The CMC® exam will be held March 1-10, 2019 at Schoolcraft College in Livonia, MI. The CMC® exam is an extensive 8 day exam offered exclusively by the American Culinary Federation (ACF). The CMC® is the highest level of certification a chef can achieve. Chefs holding the CMC® certification have demonstrated the pinnacle of professionalism and skill. 72 chefs have successfully passed the CMC® exam with 67 currently certified. CMC® Exam Registration

Exam registration is limited to 12 candidates. You must have pre-approval to register. Application and detailed registration information can be found on the CMC webpage.

CMC® Exam Structure

The CMC® exam is divided into 8 Exam Majors or Categories. 6 Exam Majors are attempted in the first section leading to the Final Exam which includes the remaining 2 Majors.

The Exam Majors leading to the Final 2 Majors include:

  • Healthy Cooking
  • Buffet Catering
  • Classical Cuisine
  • Freestyle Cuisine
  • Global Cuisine
  • Baking and Pastry

The Final Exam Majors include:

  • European Cuisine
  • Market Basket

CMC® Exam Scoring

Each Exam Major comprises of a practical exam that is scored by a panel of Certified Master Chefs®. Candidates must successfully pass each Exam Major to earn the CMC® designation. Detailed scoring and exam information can be found in the CMC Handbook.
