Nueske’s Applewood Smoked Meats was founded in 1933 in Wittenberg, Wisconsin, by R.C. Nueske. It was the heart of The Great Depression and times were hard for everyone. R.C. thought that he could help ease his family’s hardships by selling some of his family’s goods to area people and businesses. The family had been creating traditionally made smoked meats from recipes brought to America since the family immigrated to Wisconsin from Prussia in the 1800s. R.C. loaded up the back of his automobile with the Nueske family’s freshly smoked hams, sausages, and bacon and traveled through Wisconsin’s Northwoods, stopping at the many resorts in the area to see if people would sample his wares. Although money was tight, people knew a good thing when they tasted it and word of R.C. Nueske’s Applewood Smoked Meats traveled far and fast.
Today, Nueske’s Applewood Smoked Meats remains located in their hometown of Wittenberg, Wisconsin, and continues to be operated by the Nueske family, now in its third generation of business. Robert Nueske, one of the sons of R.C., is the current president and his daughter Tanya Nueske is the company’s national sales manager and executive vice president. Nowadays, instead of being sold only locally in Wisconsin, Nueske’s has expanded greatly and has distributors and a loyal following of food lovers across the nation.
Nueske’s Applewood Smoked Specialties are best known for their sweet, rich smokiness and consistently high quality—something which can be acquired only through the time and patience taken to slowly smoke their hand-selected cuts of meat over glowing embers of genuine applewood. Slabs of Nueske’s bacon are hand-trimmed and smoked over applewood logs for a minimum of 24 hours, allowing the signature smoky flavor of Nueske’s to develop and permeate the entire cut of meat. Nueske’s Applewood Smoked Bacon has proven itself a winner in taste tests time after time and has even received four gold medals in just ten years from the National Association for the Specialty Food Trade (N.A.S.F.T.: 2001, 2006, 2009, 2010)—this means that Nueske’s was judged the best specialty meat in the whole nation four times over. No other meat company has ever won the gold in the category of “Outstanding Meat, Pâtè, or Seafood” so often in such a short span of time. Nueske’s Applewood Smoked Bacon has been mentioned in almost 100 books and cookbooks in the past decade, not to mention full articles in The New York Times and The Chicago Tribune.
Nueske’s creates a wide variety of items, ranging from traditional German sausages like mettwurst and bratwurst to several varieties of smoked bacon, many hams, types of poultry, ribs, chops, and pâtè.
