“I came up with this perfect summertime palate cleansing course in preparation for my CSC Practical exam. Others enjoy it so much, that I often serve it to friends and family.”

Ingredients

Mesclun Mix - 5oz
Course Kosher Salt - TT
Black Peppercorns, Freshly Ground - TT
Strawberries, sliced - 28 slices
Kiwi, quartered and sliced - 28 slices
Oranges, supreme and dice - 12 chunks
Citrus Vinaigrette - 1 fl. oz.

Instructions

1. Gently toss salad greens with salt and pepper to season.
2. Continue to toss in the vinaigrette.
3. Plate the salads in chilled salad bowls.
4. Garnish with fresh fruit.
5. Serve Immediately.
