Training and Certification Program
for US Military
American Culinary Federation (ACF) certification is a symbol of professionalism
and is a means of validating education and experience at various stages
of professional growth. It is recognized world-wide by the World
Association of Chefs Societies, the world's largest culinary association.
To make your certification process easier, certification training
programs and test centers have been established at major demographic
locations around the country.
ACF certification is open to:
- Chefs
- Cooks
- Bakers
- Culinary educators
- Foodservice mangers
- Administrators
- Food preparation personnel
ACF certification levels do not go by title or rank but by how the
position is defined. The culinary training and experience gained in
the military may qualify you for one or more of ACF certification
levels. Based on your education and experience, find the certification
level best suited.
All certification levels require:

The necessary documentation for the certification level, including:
- Civilian and/or military work experience.
- Formal education including high school, college or military
training schools.
- Completion of the 30-hour courses in:
- Food Safety & Sanitation Practices
- Nutritional Education
- Leadership, also known as Culinary Business Management &
Supervisory Skills
Each of the three 30-hour courses are valid for five years. After
five years, an eight hour refresher course is required. All courses
are available on-line through various military learning Web sites,
ACF educational partners and schools, and during the ACF National
Convention. Select courses are available during the ACF Regional
Conferences.

Passing two exams:
- One written exam may be taken at any LaserGrade
location
- One practical exam at any of the following test
centers
When you are ready to submit the ACF certification
application, send all documentation, proof of passing both the
written and practical exam and the appropriate fees to the American
Culinary Federation.
