Schenectady County Community College Student Caitlin Sive Named ACF Northeast Region Student Chef of the Year

St. Augustine, Fla., March 28, 2011—Caitlin Sive of Glenville, N.Y., a student at Schenectady County Community College, Schenectady, N.Y., received the American Culinary Federation, Inc. (ACF) Northeast Region Student Chef of the Year award at the awards gala at the close of the 2011 ACF Northeast Regional Conference held at the Renaissance Columbus Downtown Hotel, Columbus, Ohio, March 20–23, 2011.

“I was extremely pleased with my performance. Out of all the times that I practiced prior to the competition, this was my best run-through,” said Sive. “Winning this award has filled me with a sense of determination to win again at nationals. The competition will be fiercer than it was at regionals, so I will definitely have to step up my game.”

Sponsored by Custom Culinary, Inc., the ACF Northeast Region Student Chef of the Year award recognizes an up-and-coming student who demonstrates a high level of professionalism, culinary skills and a passion for the culinary arts. Sive competed against one other student and prepared sautéed chicken breast, roasted garlic, pea and carrot risotto, braised leg of chicken, sautéed broccoli with truffle purée, red wine reduction, and herb, vegetable/chicken sausage before being declared the winner. Students prepared two portions of a main dish or a hot dessert. Savory menus were required to incorporate a whole bone-in chicken. A panel of judges chose the winner. As this year’s Northeast Region recipient, Sive will compete for the national title against winners from the three other ACF regions at the 2011 ACF National Convention in Dallas, July 22–26.

Sive, who will graduate in the spring with an associate degree in culinary arts, decided she wanted to become a chef at age 13. During her time at Schenectady County Community College, she has excelled in academics and as a student leader. She is currently a member of the school’s hot-food team for the second year. She has also been involved in her local ACF chapter, ACF Capital District–Central New York, serving as the student chapter’s president. Sive has led fundraiser and community events for the chapter, revitalized student meetings by bringing in educational presenters and started a student chapter newsletter. After graduation, she plans to attend State University of New York at Delhi to pursue a bachelor’s degree in business management with a focus on hospitality management. She also plans to pursue the Certified Sous Chef® designation in the near future.

The 2011 ACF Northeast Regional Conference, hosted by ACF Columbus Chapter, brought hundreds of chefs, cooks and foodservice professionals to Columbus. The conference provided attendees with opportunities to advance their professional development and enhance their culinary skills through business seminars, cooking demonstrations featuring the latest trends and techniques, cooking competitions and awards.
