May 3rd 2010~ Chicago Chefs of Cuisine Assoc.
Presents
The lighter side of a Chef Gourmand when you are 300#s
Are you ready for Cinco de Mayo on the third of May @ UIC

Life achievements and contributions from our Spanish friends. Roy Silva was an executive chef at the Palmer House Hotel Hilton and also the Chicago chefs vice president, he started out as a dishwasher, he did many Escoffier, Academy, presidential dinners and the hotel was known for its Russian service also known as French service Jesse Mercado was president of both the Illinois executive chef and the Chicago chefs of cuisine and went on to own several successful restaurants and operate the Corinthian yacht club for many years, he also started out doing menial work in the kitchen. As a side note I have known Jesse for over 40 years and consider him to be one of my best friends and also he was a partner in my company when I had old orchard country club as the proprietor.
