ACF's Youth Team to Host Gala Dinner at National Convention
The Youth Team of ACF Culinary Team USA 2004, just having returned from the 31st WACS Congress in Ireland where it won a gold medal in hot-food competition against 15 other youth teams from around the world, will create a special dinner with the help of Culinary Team USA National members during the 2004 ACF National Convention in Orlando, Fla.
The five members of the Youth Team - Scott Campbell (captain), Chad Durkin, Kim Lex, Krystal Weaver and Louis Yocco - are all registered apprentices through ACF. They will prepare four courses on Friday, July 16, 7:30 p.m., at Gaylord Palms Resort near the Orlando World Center Marriott (host site of the convention). The event will serve as a fund-raiser to assist the Youth Team in preparation for and travel to the IKA International Culinary Art Competition in Erfurt, Germany, in October. Seating at the Orlando dinner is limited to the first 125 tickets sold at $100 each.

Event to Benefit Chef & Child and Culinary Team USA at ACF National Convention Will Give Away a 1975 Pontiac Trans Am
In honor of ACF's 75th Anniversary, a 1975 Pontiac Trans Am in mint condition will go to one fortunate winner in a raffle to benefit the ACF Chef & Child Foundation and ACF Culinary Team USA 2004, to take place at SeaWorld Adventure Park during the 2004 ACF National Convention in Orlando, Fla., on July 19. Ticket holders have the opportunity to win one of the vacation packages, as well as other prizes. You do not need to be present to win.
Chapters that sell raffle tickets, at $5 each, are required to submit to ACF only the first $750 raised. Monies in excess of $750 stay with the chapter to fund its programs. Deadline for chapters to submit monies to ACF's national office is June 30. After that date, only individual tickets will be sold, and only on-site at the convention in Orlando prior to the drawing on July 19. If you are not attending the convention, purchase raffle tickets from your chapter until June 30.

The National Culinary Review Asks, "Are You Making Enough Money?"
The National Culinary Review seeks chefs who are willing to speak candidly
about financial compensation, on the basis of anonymity if necessary. Consider
career expectations versus reality, work hours and work weeks. Is there a disconnect
between the hourly wage of a new line cook and the cost of his or her culinary
training? If pending legislation in Congress eliminates overtime pay for certain
positions such as sous chef, will that affect you? If you had the time to take
a vacation, could you and/or your family afford one? Have you finally "hit the
jackpot" with your salary, and if so, how long did it take you to get there? NCR
wants to compare what chefs earn to the education they paid for and the effort
