Culinary Programs Recognized by ACFFAC as Exemplary at 2008 ACF Southeast Regional Conference
Ten postsecondary culinary programs were recognized by the American Culinary Federation Foundation Accrediting Commission (ACFFAC) as exemplary at the 2008 ACF Southeast Regional Conference held at the Williamsburg Lodge, Williamsburg, Va., March 1-3.
The programs are at the following schools:
- Faulkner State Community College, Gulf Shores, Ala.
- Florida Culinary Institute, West Palm Beach, Fla.
- The International Culinary School at The Art Institute of Atlanta, Atlanta
- The International Culinary School at The Art Institute of Fort Lauderdale, Fort Lauderdale, Fla.
- Jefferson State Community College, Birmingham, Ala.
- Keiser College, Tallahassee, Fla.
- Orlando Culinary Academy - Le Cordon Bleu Program, Orlando, Fla.
- Stratford University, Falls Church, Va.
- National Center for Hospitality Studies at Sullivan University, Louisville, Ky.
- Trenholm State Technical College, Montgomery, Ala.
The ACFFAC, recognized by the Council for Higher Education Accreditation (CHEA), provides regulatory oversight of post-secondary institutions. This specialized accreditation is a voluntary action on the part of the institution that requires curriculum, faculty, resources, support staff, and organizational structure all meet or exceed quality standards.
To qualify as an exemplary program upon renewal of ACFFAC accreditation, a program will have had to have been in full compliance the last two site visitation reports. The visiting team determines that the program has met the ACFFAC standards in eight required areas: eligibility; program mission and goals; organization and administration; faculty and staff; curriculum; facilities; student services; and assessment. Exemplary programs are accredited for seven years.
2008 ACF Central Regional Conference Photos
The 2008 ACF Central Regional Conference that took place, February 8-10, at the Hyatt Regency Crown Center in Kansas City, Mo., was a tremendous success, and a good time was had by all. Key Ingredient Pledge Drive Update
ACF Culinary Team USA is a little closer to Erfurt thanks to the many ACF members who pledged their support. Individual donations, from $10 to $1,000, are steadily being received, with more than $1,500 donated by members during the Central Regional Conference. There is still a long way to go in supporting ACF Culinary Team USA as they represent YOU at the "culinary Olympics."
A challenge to all ACF chapters from Clark Braun, CEC, president of ACF Black Hills Chapter of Professional Chefs in South Dakota:
"I want to throw out a challenge to all chapters. We're a small chapter with only 21 members, and we're pledging $1,500 to support the teams. South Dakota is probably one of the lower pay scales in the country, and our pledge of $1,500 is almost $71 per member. If we can do it, other larger chapters can, too. With the interest and attention given to competitions on TV and in the media, we want our team members working hard and training so they win. You, too, can either stand behind them with your pledge so they can train hard to win, or you can wonder why they didn't do better."

ACF Membership Opportunities
ACF has expanded its membership opportunities by creating the Culinary Enthusiast category available to individuals not employed in the culinary industry, but who have a passion for the culinary arts. Member benefits include attending chapter events, discounted conference and convention registrations, ACF e-store special pricing, subscriptions to The National Culinary Review and The Culinary Insider, and a gift.
The category of Culinarian was also added and includes line cooks, bakers, pastry cooks and other non-management culinarians with a minimum of six months of full-time employment. This level of membership is limited to five years.The goal is for the culinarian to pursue on-the-job training and gain the experience necessary to advance to the Professional Culinarian level.
