Childhood Nutrition Day October 16
The Chef & Child Foundation (CCF) is in
need of ACF chapters, members and volunteers to host events and
activities for Childhood Nutrition Day on October 16. Childhood
Nutrition Day focuses on the need for education about childhood hunger,
proper nutrition and obesity issues. Support our children by
implementing an event in your community in the fight against childhood
hunger, malnutrition and obesity. Learn more and find out what you can

The mission of CCF is to educate children and families in
understanding proper nutrition through community-based initiatives led
by American Culinary Federation chef members, and to be the voice of the
culinary industry in its fight against childhood hunger, malnutrition
and obesity.
Plugrá European-Style Butter Receives ACF Seal of Approval
Products submitted for ACF’s Seal of Approval are rigorously
tested based on set criteria. Three varieties of the Plugrá
European-Style Butter—salted, unsalted and clarified—were
evaluated for consistency, performance, adaptability to various cooking
situations for format consistency, and accuracy of labels and marketing
materials. In addition, each Plugrá butter was tested in a variety
of applications, including soups, sauces, appetizers, entrées side
dishes and baked goods, and as a compound butter. The three Plugrá
European-Style Butters were all endorsed after passing the tests with

Know Your Recertification Date
It is important that you know your recertification date so that you
can plan accordingly and avoid your certification expiring. Plan ahead
and keep your contact information current, including your mailing and
e-mail addresses. Review your recertification date and update your
contact information through your member profile on ACF’s Web
site.
Share Our Strength’s Great American Dine Out
Sept. 20–26 is Share Our Strength’s Great
American Dine Out. You can help raise money to end childhood hunger in
America by dining at a participating restaurant or register your
restaurant to donate a portion of your sales for the week to Share Our
Strength.

the weekly guests on “The Chef’s Wife,” a TV cooking
and talk show airing on WTVI in Charlotte, N.C. Find out which ACF

Ron Duprat Advances in Top Chef
Last week chef’testant and ACF member Ron Duprat successfully
advanced to episode five of Top Chef: Las Vegas. He
prepared Escargot Provençal with Caramelized Shallots, Pernod and
Fresh Herb in the quickfire challenge. Paired with Robin Leventhal for
the elimination round, they were tasked to create a French dish and made
Frog Leg Meuniere with Lemon Confit, Mache and Arugula Salad with Fried
Capers.
