Straight Talk for Chefs
As chefs, nothing is more important to us than the food we source.
However, unlike areas such as energy and water conservation and waste
reduction, there are no easy answers about food to guide us. Chris
Koetke, dean of culinary arts, Kendall College School of Culinary Arts,
speaks with Dr. Fred Kirschenmann, a fellow with the Leopold Center at
Iowa State University, Ames, Iowa, in this month’s Sustainability
Corner to help clarify some of the issues. More
ACF Board of Directors Nominations
Nominations of candidates interested in running for positions on the
ACF National Board of Directors for the 2011–2013 term will be
accepted from the floor at the Board of Governors meeting on Tuesday,
Aug. 3, during the 2010 ACF National Convention at the Anaheim Marriott,
Anaheim, Calif. Nominees will have until December 1 to submit, in
writing, their intent to run, along with supporting documentation, to
Mark Kent, CEC, chair of the ACF Nominations & Elections Committee.
Guidelines and criteria will be posted on the ACF website by
mid-July.

Developing a budget is a necessary step in making your ACF
certification process go smoothly. Understanding and planning for the
initial
cost of certification is almost as important as obtaining your

Challenge

Culinary Team USA in its journey. The chapter made a three-year

2011 and 2012. It is challenging ACF chapters to match or beat its

National Restaurant Industy Needs You
The National Restaurant Association is looking
for examples of ways restaurateurs provide nutritious menu options to
consumers and help families provide healthful food options to children.
It will use the examples to showcase the restaurant industry’s
commitment to healthy living in a strategic communications effort.
