ACF’s Central Region Members Gather in Houston

St. Augustine, Fla., March 17, 2003—The Texas Chefs Association will host the American Culinary Federation’s (ACF’s) 2003 Central Region Conference at the Westin Galleria in Houston April 23–27. Chefs, culinarians, and leaders representing all segments of the foodservice industry, including restaurants, private clubs, hotels, and culinary schools, will travel to Houston from 15 states within the U.S. central region.

The conference is a yearly gathering at which members attend educational seminars and demonstrations, exchange ideas, network for business, and visit the Trade Expo, an exciting array of products and services.

Friday, April 25, executive chef Charles Carroll and executive pastry chef Darrin Aoyama of Houston’s River Oaks Country Club and French chefs Alain LeNôtre, Daniel Klein, and Dominique Bocquier of the Culinary and Wine Institute Alain & Marie LeNôtre will give cooking demonstrations.

Saturday’s Taste of Texas showcase will feature a German cooking demonstration with certified master chef Ernst Gruch and demos of Tex-Mex, Southern, and Texas BBQ cooking styles. Also on Saturday, The Art Institute of Houston will host the Student Hot Food Competition, and contestants will compete in the Baron H. Galand Culinary Knowledge Bowl.

Seminars include Mustards, Vinegar and Verjus with Ray Maxa of Sysco Food Services and Wines of Mexico with Gary Sehnert. French oenologue Michel Buillard and sommelier instructor Melba Allen from the Culinary and Wine Institute Alain & Marie LeNôtre will discuss French wines.
