A member of the American Culinary Federation since 1977, Fellow of
American Academy of Chef since 1987, Chef Aiello he has been elected to
many positions locally, regionally and nationally as the current AAC Central
He has always been totally committed to the future of the ACF and AAC, as national treasurer, submitted a financially sound budget that he monitors aggressively through the ACF accounting department staff and outside auditors. He has also served as president and treasurer of the ACF Chicago Chefs of Cuisine Association, ACF State Representative for Illinois, and treasurer for two Central Regional Conferences. As AAC Central Regional Director has advised many current and future Fellows in the process of achieving their goals.
A graduate of the Culinary Institute of America, Chef Aiello has held various positions in the food service industry including chef/administrator for a 500-employee company where he was responsible for its multi-million dollar budget. His work as chef/co-owner of two banquet facilities successfully paved the way for the realization of his dream. For the past 20 years, he has owned and operated Apropo Catering, a highly successful multi-faceted food service management and special events company. Chef Aiello holds memberships in many industry associations, to include Catering Executives Club of America, Golden Toque, Les Amis d’ Escoffier Society of Chicago (member and secretary ) and Ordre International des Disciples d’ Auguste. He serves on several non for profit organizations, advisory boards: Professional Cooking, Baking and Service Technology Center of DuPage, and IBVM Sisters of Wheaton.
