Honey Balsamic Dressing

1 cup balsamic vinegar
3/4 cup honey
1 tablespoon Dijon mustard
1 garlic clove, minced
1 shallot, minced
1/2 teaspoon salt
1/4 teaspoon fresh pepper, ground
1 cup (or less) extra-virgin olive oil
3/4 cup (or less) canola oil
1/4 cup fresh basil, chopped


Combine the vinegar, honey, Dijon mustard, garlic, shallot, salt and pepper in a food processor. Process at medium to high speed to mix well.

2. Add the olive oil and canola oil gradually, processing constantly until the desired consistency.

3. Combine with the basil in an airtight container.

4. Chill in the refrigerator.
