“Baharat simply means "spice" in Arabic. It is an all purpose seasoning used in Middle Eastern cuisine and some parts of Africa.”

Ingredients

2 Tbs. black peppercorns
2 Tbs. coriander seeds
2 Tbs. cumin seeds
1 Tbs. allspice berries
1 tsp. cardamom seeds
1/2 tsp. whole cloves
4 (3-inch) cinnamon sticks broken into pieces
2 Tbs. ground sweet paprika
1/2 tsp. grated nutmeg

Instructions

Mix and grind the whole spices using spice mill or coffee grinder (in a couple of batches if necessary). Add the paprika and nutmeg and combine. Store in airtight container. You may add some other spices such as saffron, sumac, turmeric or even chilies. Sometimes dried rose petals are added.
