California Avocado/Black Bean Relish

Ingredients

½ red onion, minced
1 red bell pepper, minced
1 green bell pepper, minced
1 jalapeño pepper, minced
¼ cup lime juice
1 T. cumin
1 T. oregano
2 T. canola oil
¼ cup honey
¼ cup chopped cilantro
2 cups cooked black beans
1 fresh California avocado, diced
Salt and pepper, to taste

Instructions

In mixing bowl, combine red onion, red and green bell pepper, jalapeño pepper, lime juice, cumin, oregano, canola oil, honey, cilantro, black beans and avocado; season with salt and pepper.
