Buttermilk & Chive Potato Croquette

Ingredients

16 oz. potatoes
2 oz. buttermilk
1 oz. butter
Chives
Salt & pepper

Instructions

Method:

Boil potatoes for 25 minutes

Strain and put in oven to allow to dry for 10 minutes

Pass through a food mill or ricer

Add the remaining ingredients

Pipe through a pastry bag

Allow potatoes to cool off

Use standard breading procedure

Deep fry for 3 – 5 minutes
