2 ½ cups flour
2 tsp. sugar
½ tsp. salt
½ pound chilled unsalted butter or shortening cut into one ounce pieces
7 Tbsp. ice water
1.Blend the flour, sugar and salt on high speed in food processor.
2.Add the diced butter and blend until mixture has a cous cous type consistency.
3.Add the ice water and blend on high speed until the dough pulls away from the sides.
4.Refrigerate until ready to use.
