Hickory Smoke Sausage and Red Bean Soup

Ingredients

2 cups red beans (fresh or dried)
2 cups macaroni noodles
2 cups hickory smoked sausage sliced and sauteed
2 Tbsp. salt
1 tsp. cayenne pepper
1 cup small diced sweet onions
1 cup small diced carrots
1 cup small diced celery
2 cup fresh spinach leave
2 cups small diced tomatoes
1 cup small diced red peppers
1 fresh whole garlic clove diced
5 fresh sweet basil leaves (chiffonade)
1 cup tomato sauce
2 cups chicken stock
1 cup beef stock
1 quart water

Instructions

Boil beans in water, cayenne pepper and salt until tender
Add diced (onions, celery, carrots, diced tomatoes, red peppers and garlic)Simmer for about 3 minutes
Add chicken and beef stock
Add macaroni noodles and cook until tender
Add sauteed sausage, fresh spinach leaves, tomato sauce and sweet basil
Simmer for 5 minutes until the flavors are all incorporated

Yield

128 oz. about 16 - 8 oz. servings
