Wild Mushroom Onion Mélange

3 T. unsalted butter
2 lbs. yellow onions, thinly sliced
3 T. minced garlic
1 lb. cremini mushrooms, sliced
8 oz. shiitake mushrooms, stemmed, sliced
5 oz. wild mushrooms, sliced
½ cup sherry
1 cup minced fresh herbs (thyme, parsley, chives, marjoram, etc.)
1½-2 t. kosher salt
1 t. cracked black pepper
In large skillet, heat butter over medium-high heat. Add onions; cook 8-10 minutes, until softened. Stir in garlic; continue to saute for 1 minute. Add mushrooms; saute for 8-10 minutes, stirring often, or until dry and start to caramelize. Stir in sherry; cook until almost dry. Add herbs; adjust seasoning with salt and pepper.
