Mango Sausage/Potato Breakfast Burrito

Ingredients

3 lbs. small red potatoes, diced
¼ cup olive oil
3 lbs. spicy sausage, casings removed
6 ripe (18 oz.) mangos, peeled, pitted, diced
2½ cups (6 oz.) shredded Monterey Jack cheese
6 T. chopped cilantro
24 small whole-wheat tortillas

Instructions

1. In medium microwave-safe bowl, toss diced potatoes with oil; cover tightly with plastic wrap. Microwave until cooked through, about 5 minutes. Drain; set aside.

2. In medium nonstick skillet, cook sausage until no longer pink and internal temperature is 170ºF, about 10 minutes. Remove from pan with slotted spoon; drain/cool on paper towel-lined plate.

3. Heat same skillet over medium heat; add potatoes. Cook until golden-brown, about 5 minutes. Transfer to large bowl; mix with sausage, mango, cheese and cilantro. Divide sausage and potato mixture among tortillas.
