Spring Time Grilled Chicken Avocado Grapefruit Salad

R Cold (40 Degrees 2 Ounce
Salad-Iceberg, Romaine & Spring Mix
R Chicken-Breast, Basic (Random)Sliced 3 Ounce

Dressing-Vinaigrette, Garlic

Onions-Red, Pickled
Avocado, Fresh (#2) Peeled, Sliced 1/4" 1 Ounce
Grapefruit, 32ct Sectioned 2 Ounce


1) Pre Prep:
2) Prepare sub recipes according to recipes.
3) Cut chicken into slices.
4) For Service:
5) In a stainless steel bowl, combine 1 cup spring mix, 4 avocado slices, 1/2 cup segmented grapefruit, 1/2 oz red
onions and 1/4 cup dressing. Toss gently and place mixture on serving plate.
6) Place 3 oz of hot chicken on top of salad. Serve immediately.
7) Shelf Life: If left over, do not reuse.
