Creamy Mango Habanero Dressing

Ingredients
1 (12 oz.) package Mori-Nu soft silken tofu, drained well
2 ripe mangos, peeled, rough chopped
½-1 fresh habanero chili, minced
Juice of 2 limes
2 T. tamari soy sauce
2 T. honey
½ cup soybean oil
Salt and pepper
Instructions
Method: Combine tofu, mango, chili, lime juice, soy sauce and honey in medium mixing bowl. Puree with hand wand or put in blender. Slowly add oil to emulsify while still blending. Taste; adjust seasoning with salt and
pepper. Serve over mixed local greens with avocados, hearts of palm, red peppers and Jamaican jerk pork.
