“Chef Carrie Summer of Chef Shack in Minneapolis, Minnesota and Bay City, Wisconsin wanted to transform the classic Caesar Salad recipe into something high-end and sophisticated — something that would have all the flavor and elements of a Caesar salad, but look more like a dessert. The romaine lettuce, watercress, radicchio and anchovies are all arranged artfully, topped with a Parmesan frico and finished with a dollop of Caesar dressing on the side.”
1 cup grated Parmesan cheese
1. Sprinkle grated Parmesan into a medium-hot nonstick pan in 3” circles. Cook until edges are golden brown.
2. Remove and cool on parchment.
