“Kheer is one of the most popular Indian Dessert and usually made as a pudding with milk and rice. This variation brings a different flavor to the milk based dessert with crunch of apples and texture similar to the traditional kheer.
“Tips- Soak saffron and raisins in warm water for 5-6 minutes before use.”
Milk full cream -1.5 liters
Grain Sugar -100gm
Green Cardamom -5 No.
Saffron -few strands
Chopped Pistachio -10gms
Green Apple -1kg
1.Peel the Apples, remove core and grate.
2.Combine the apples, sugar and 2 tbsp. of water in a pan and cook till the sugar has dissolved and the apples
are soft. Keep aside.
3.Boil the milk in a broad non-stick pan and simmer till the milk is reduced to half the original quantity.
4.Add the sugar and raisins and simmer till the sugar dissolves. Soak saffron in warm water.
5.Add the cardamom powder, saffron (keep few for garnish) and apples and mix well.
6.Remove from the flame and keep aside to cool.
7.Refrigerate for at least 1 hour.
8.Serve chilled garnished with cardamom powder and saffron.
