Chocolate/Chile Ice Cream

Ingredients

2 quarts heavy cream
2 quarts milk
2 cups light crème de cacao
4 cups cocoa powder
2 t. salt
5 cups sugar
1 t. cayenne
1 t. korintje cinnamon
24 egg yolks

Instructions

Method: In saucepan over medium-high heat, whisk together heavy cream, milk, crème de cacao, cocoa powder, salt, sugar, cayenne and cinnamon. Bring to a boil; remove from heat. In large bowl, whisk egg yolks. Add hot mixture to egg yolks in thin, steady stream, whisking constantly until smooth. Transfer to Pacojet (ice cream) canisters; place in ice bath until chilled. Store chilled container in freezer.
