Mediterranean Style Quinoa

Quinoa, 1 cup
Water, 2 Cups
Fresh garlic, chopped, 1 tsp
Parmesan cheese, shredded, 1 Tablespoon
Sundried tomatoes, julienne, ΒΌ cup
Fresh basil, chopped, 1 Tablespoon
Fresh oregano, chopped, 1 Tablespoon


In a medium sized sauce pan, bring two cups of water to a boil. Rinse quinoa under warm water and then drain. Pour quinoa into boiling water, reduce heat to a simmer, leave uncovered. Cook until all water is absorbed, stirring occasionally, about 15 minutes. Add sliced sundried tomatoes, parmesan cheese and garlic and cook for an additional 2 minutes. Remove from heat.
Add basil, oregano, and gently mix.
