Arugula Peanut Pesto

2 cups Arugula
1/2 cup Toasted Peanuts
1 ea Lemon (Juice and Zest)
1 t. Chopped Garlic
1/2 cup Olive Oil
1/4 t. Salt


1) Place all the ingredients for the pesto in a blender and blend to a paste (if needed, thin the pesto with a little water).
