Skills for Culinarians Day Cookbook, July 2004
8 oz. Dan-Dan noodles (or any thin wheat noodles)
1/2 oz. peanut butter
1/4 oz. sesame oil
1/2 oz. soy sauce
1/2 oz. white vinegar
1/2 oz. white sugar
1/4 oz. minced garlic
1/4 oz. chicken base mixed with 1/2 cup water
1 T chili oil
1 T Szechuan peppercorn oil
Fresh ginger juice to taste
1/4 oz. chopped green onion, for garnish
1) Boil Dan-Dan noodles until soft. Drain and cool.
2) Mix all ingredients except green onions until blended. Set aside.
3) For service, top cold Dan-Dan noodles with sauce. Garnish with green onion.
