Cabbage Salad with Chicken (Goi Ga Bap Cai)

1 cup poached and shredded chicken parts
1/2 medium head green cabbage, finely cut Vi cup fish sauce
2 T finely chopped mint
2 T finely chopped rau ram leaves
1 T sugar
2 T lime juice
1 t cracked black pepper
2 T sliced and fried shallots
2 T coarsely ground peanuts
1/4 cup cilantro leaves
In large mixing bowl, combine all ingredients and toss gently. Arrange on plate or platter and garnish with shallots, cilantro and peanuts.
