Miso Marinated Red Snapper with Shitake Mushrooms

Ingredients

4 6 oz. red snapper fillets
12 shiitake mushrooms
6 oz. miso
6 oz. sweet sake
21/2 T soy sauce
3 oz. sugar

Instructions

1) Combine miso, sake, soy and sugar for marinade. Place fish in marinade for 3 hours.
2) Grill fish 3 minutes a side.
3) Grill shiitakes until tender.
4) Place shiitakes over snapper for service, Serve with side of soy or lemon soy sauce.
