Savannah Red Rice

Skills for Culinarians Day Cookbook, July 2004
1/8 lb. salt pork, finely diced
1/2 cup each diced red and green bell pepper
1/4 cup diced celery
1 cup diced onions
2 t minced garlic
1/4 pound smoked sausage, diced
2 cups long-grain white rice
2 cups canned whole tomatoes, drained and crushed
2 T tomato paste
1 1/2 cups water
1 1/2 t salt
1/4 t freshly ground black pepper
1/2 t cayenne pepper
1) Heat large heavy bottom saucepan; cook salt pork until crisp.
2) Add red and green peppers, celery, onions, garlic and sausage; cook 3-4 minutes.
3) Add rice; stir coating rice with drippings. Stir in tomatoes, tomato paste, water, salt and black and cayenne peppers. Cover and simmer about 25-30 minutes or until rice is tender and liquid is absorbed.
